Can someone create more tokens?
A mint authority can create additional supply. That can dilute existing holders, even when a price chart looks healthy.

What this cannot tell you
An absent mint authority does not establish that ownership is distributed, liquidity will remain available or a token will retain value. Other token features need separate checks.
